Barley atta is an Indian unleavened bread made from whole wheat flour and barley flour. It is traditionally made by kneading the dough in the hands, a process which leaves the dough sticky and uneven. It is then flattened and placed on a tava, or griddle, where it is cooked over low heat until it becomes crisp and brown on the outside and soft and fluffy on the inside.
